Mushroom Medley

Mushrooms | Fresh Corn | Snap Peas | Family Style

Great side dish for grilled meats or vegetarian entree


Ingredients
  • 2 pounds Shiitake and Crimini and/or Porcini

  • 1 cup Snap Peas

  • 1 cup Fresh Corn

  • ½ cup EVOO

  • 1 cup Minced Shallot

  • 2 oz Unsalted Butter

  • 2 tablespoons Kosher Salt

  • 1 teaspoons Cracked Pepper

  • 2 tablespoons Chopped Garlic

  • ¼ cup Melted Butter

  • 1 cup Chopped Italian Parsley

Instructions
  1. Brown the butter slightly, shallots at the end and garlic

  2. Add the mushroom mix, your choice

  3. Pan saute funghi til translucent , tender

  4. Add sanp peas, approx 3-5 minutes

  5. And spices and herbs, toss in parsley add salt
