Lava Espresso Cake

Chocolate Lava | Espresso Ice Cream | Nutella


Irresistible...ooey gooey chocolaty goodness.



Ingredients Lava Cake

6 tbsp Unsalted Butter, room temp

½ cup Dutched Process Cocoa

1 1/3 cup A/P Flour

1 tsp Baking Soda

½ tsp Baking Powder

½ tsp Salt

3 tbsp Milk

¼ cup Melted Butter

1 1/3 cup Granulated Sugar

1 ½ tsp Vanilla

2 Large Eggs, room temp

Instructions
  1. Cream butter and sugar

  2. Add eggs gradually, fold in milk and butter

  3. Folds in dry ingredients

  4. Scoop into well oil and floured or seasoned brioche pans or medium sized cupcake tins

  5. Place a dollop of the ganache (following recipe) in center

  6. Bake at 350 degrees


Ingredients Lava Cake

8 oz Finley Chopped Dark Chocolate, min 64%


½ cup 40% Heavy Cream


4 tbsp Unsalted Butter

  • 1 tbsp Light Corn Syrup

  • Warm or scald cream and pull off the fire

  • Add cream, butter and corn syrup….should seize the mass or firm up

  • This will be placed in batter at oven time…..at center

Bake & Assembly

Lava cakes are like souffle they are timed and measured dessert

Should be presented when you and service are ready for presentation point

Garnish with whipped cream and toasted almonds, fruit du jour

I love Nutella, so I warmed and placed in piping bag…drizzle
